Beer Styles: Saison
The history of the Saison is shrouded in a bit of mystery. It is said that the style was brewed at low strength for farm workers in Wallonia, the French speaking part of Belgium. However there is no evidence to support this. We do know, however, that the style was revived by DuPont in the 1920s.
When tasting a Saison you will find peppery, spicy phenols - think clove and white peppercorns. This is due to the high fermentation temperatures the Saison yeast likes. It will be very carbonated and dry as most of the residual sugar is used by the yeast.
Saisons are one of my favourite styles - they can be very complex but refreshing with zesty citrus pairing with the spicy pepper notes and dry finish - go find some now!!
