Hops: Ernest

Ernest is a British hop named after its breeder, Professor Ernest Salmon from Wye College in Kent in the 1920s but was originally known as OZ97. It is a late maturing hop, I have seen it used in later green hop beers by breweries in Kent.

This variety has New World characteristics of fruity apricot, citrus and spice. It was thought to be too strong when it was first grown because of it's 'coarse, American aroma' and Fuggles was chosen from the original trial instead. Today this hop works perfectly with modern styles because of its combination of bold fruit flavours.
