Hops: Saaz

Saaz is one of the 'noble' hops used in German and Czech beers. It is grown in the Czech republic and named after the Czech city of Žatec. It is very popular in czech pilsners and bohemian beers.

Saaz has a distinctive flavour when used in beer. Look for earthy, herbal and spicy notes. It is quite mild and the alpha acids are low which means it is better used as an aroma hop towards the end of the boil, than as a bittering hop at the beginning of the boil. However, it is often used to impart a delicate bitterness when used early.
