Lemon Drizzle Beer Baked Doughnuts Recipe

I have wanted to make a baked doughnuts recipe for a while. I wanted to find out if they actually taste like doughnuts or more like cake (Spoiler! They are still doughnuty!) The perfect opportunity came last week when it was Doughnut Day AND one of my fave breweries Elusive produced a lemon drizzle doughnut sour. That’s inspiration for making doughnuts right there!

I jumped on the Amazon and ordered a doughnut pan - you will need a pan - the mix is quite runny and needs the pan to make the perfect doughnut shapes. The pan allows for 6 doughnuts but I had a little bit of mix left over so you could double this and make a good 12.

What beer to use for this baked doughnut recipe?

I used Larellas, a lemon drizzle doughnut sour from Elusive. But you could also use any beer with lemon flavours, a gose or a berliner weisse for this. I’m thinking a fruited beer in the mix and then lemon in the glaze would be delicious - let me know if you try it!

Here’s the recipe:

Lemon Drizzle Beer Baked Doughnuts Recipe Ingredients:

  • 2 tbs vegetable oil

  • 60ml vanilla greek yoghurt

  • 1 egg

  • 1tbs beer

  • 48g caster sugar

  • ¼tsp salt

  • ½tsp baking powder

  • ¼ tsp vanilla extract

  • 64g self raising flour

For the Glaze:

  • ½ cup icing sugar

  • 1 ½ tbs beer

  • ½ tbs lemon juice

Lemon Drizzle Beer Baked Doughnuts Recipe Method:

1. Preheat the oven to 180oC. Grease the donut pan.

2. Place all donut ingredients in a medium bowl and mix well until there are no lumps.

3. Fill the donut pan rings ¾ full.

4. Bake the donuts for 15 minutes until golden. Meanwhile, mix your glaze. Add all ingredients to a small bowl and combine until smooth. Add more lemon if you like more sharpness from your lemon flavour.

5. Let donuts cool in the pan for 10 mins then remove to a wire rack. Drizzle over the glaze and leave to cool completely.

This were exactly what I wanted from a baked doughnuts recipe! There is still that crisp outside and a soft doughy centre. The beer and lemon juice give these doughnuts a light touch a flavour that just lifts them.
