Pancakes made with beer, what’s not to like?!

For this Pancake Day I thought I would share with you my Elvis Juice pancake recipe. This grapefruit IPA adds a citrusy hint to these thick, American style pancakes and the carbonation makes them extra fluffy.

Back in 2019 I saw that The Doghouse Hotel in Columbus, Ohio made Elvis Juice pancakes. So I had to work out how to make them myself. They came out so delicious, that I just had to share the recipe with you to brighten your lockdown Pancake Day!

What you need:

1 cup Elvis Juice

½ cup sour cream

1 egg, beaten

2 tablespoons sugar

2 tablespoons butter, melted

1 teaspoon vanilla extract

1 ½ cups self raising flour

2 teaspoons baking powder

1 teaspoon baking soda

pinch of salt

Method:

  1. Whisk together the egg, Elvis Juice, milk, sour cream, butter and vanilla extract.

  2. Combine the flour, sugar, baking powder, baking soda and salt in a separate bowl.

  3. Add the dry ingredients to the wet ingredients and whisk together until no large clumps remain.

  4. Let the batter sit for at least 15 mins - it will puff up.

  5. Heat a nonstick pan on medium/low heat. Spray with oil or melt a dab of butter in the pan. Add serving spoon sized blobs of the batter to the pan and cook on each size for 2 mins.

  6. Serve warm with your favourite toppings!

I made between 8-10 pancakes with my mix. Be aware that it is very thick and you may need to spread the batter a bit to get a ‘round’ pancake.

Now, I know in lockdown you might not be able to eat 8-10 pancakes (or you might - each to their own, no judgement here!) so here is a top tip: You can freeze these!

Let any left over pancakes completely cool. Then place them between layers of baking paper in an airtight container or freezer bag. These will last 2 months in the freezer.

You can then either defrost them in the fridge overnight or cook them from frozen! 10 mins in the oven or 1-2 mins in the microwave will work to get you warm, lovely, citrusy pancakes at any time!
